Sit down to the abundance of Mother Nature

Whatever seasonal delicacies our abundant Crystal Garden may produce, our head chef, Reinhard, is able to transform into wonderful specialties. Sparkling elderberry wine, lilac syrup, fried zucchini blossoms, borage, geraniums, marigold, violets and more, all belong to the standard repertoire of his natural Zillertal cuisine. He is of the opinion that flowers give chefs the opportunity to develop their creativity, and to experiment with flavor directions and raw ingredients, very much in keeping with the fresh dishes of modern, light cuisine.

True to the motto "A good day begins with a better breakfast", the choice is all yours: naturally, if you wish, you can withdraw to the stylish ambiance of your own room and enjoy breakfast in bed. But you also have the option of picking and choosing from our lavish, variety-filled breakfast buffet. Crispily fresh croissants, muffins, pastries, fruit, fresh-pressed orange juice, breakfast rolls, full-flavored whole-grain bread, in short: everything your heart could possibly desire.

5-course menu in the evening

Enjoy life to the full. Whenever possible, in a beautiful setting. The evening greets you with a wonderful atmosphere, lovingly set tables and carefully selected recipe ideas. Whether traditional or modern cuisine, Austrian or international, treat yourself to a 5-course dinner selection at our new Restaurant Veranda, all the while soaking in the breathtaking panoramic views. If like to sample a little bit of this and that, you are sure to enjoy our once-weekly Tyrolean Buffet or a Mediterranean Buffet.

He captivates with creations that couldn't possibly be any more delicious. He is convinced that the true artistry lies in bringing out the nutritious, yet light essences of the raw ingredients. After all, eating is supposed to be a source of joy, be healthy and emanate a sense of wellbeing - which goes right to the heart of what "Zillertaler Naturküche" is all about. The focus of this line is on seasonality and regionality. Used as ingredients are products from the organic dairy in Zillertal and the dairy in Fügen, meat from local farms and game harvested on our own hunting grounds. And whenever our garden reaches the limits of its capacity, we work with fruit and vegetables from Tyrolean farmers.

is used to make smoked sausage, homemade sausage, and meat to cook. Our "house butcher" Christian Gasser processes the venison, which comes from own hunting in the Märzengrund, to make smoked sausage and a variety of other homemade sausages.

We give special requests a hearing

Time and again, our chef reaches into his bag of tricks filled with tried-and-true recipes from the owner herself. After all, tradition is something that shouldn't be neglected either. For special requests, too, he always has an open ear. Whether gluten-, lactose- or egg-free, low-cholesterol diets or nutrition for diabetics - Martin always conjures up true treats for the taste buds.

And just for the record, our chef is more than happy to have guests peeking over his shoulder as he creates. And with a little bit of luck, he might even reveal one or two of his culinary secrets.
